Day 36 – Sadie’s Eggplant Parm

I must admit that I have the best mother-in-law in the whole wide world! Today she made an old family recipe and adapted it to suit Glenn’s preferences and it was awesome!

She brought the eggplant from New Jersey already fried and today she made the gravy (the Italian term for sauce). I took lots of photos while she was cooking and asked lots of questions, and I’m glad I did. This is definitely a dish I will make for my family. What a great healthy alternative to lasagna. Here is her recipe:

Sadie’s Eggplant Parmesan
2 large eggplants
1 Cup Flour
Salt
Pepper
3 eggs
4 tbsp olive oil

3 garlic cloves
2 tbsp olive oil
1 can Crushed Tomatoes
2 small cans of Tomato Sauce
5-6 Basil leaves

1 lb Mozzarella Cheese
1/2 Cup Parmesan Cheese

Peel eggplants and slice thinly into rounds. Place flour into a shallow bowl or plate and salt and pepper to taste. In a separate bowl lightly beat eggs. Dredge eggplant slices in flour, then egg on both sides. Then fry eggplant for 2-3 minutes on each side or until golden brown. Place fried eggplant on a paper towel lined plate. At this point you could refrigerate or freeze fried eggplant to use later, or use right away.

To make the gravy: mince garlic and heat in olive oil until it begins to brown lightly; be careful not to burn the garlic. Add tomatoes, tomato sauce and basil. Cover, and allow gravy to simmer on low for an hour or so. Stir occasionally to keep it from sticking.

Grate mozzarella cheese.

Grease a 9×13 glass pan, layer the eggplant slices, gravy, parmesan and mozzarella cheese. Bake for approximately 35 minutes at 350 degrees. You might like to put it under the broiler for a few minutes at the end to get the cheese brown and crusty on the edges. That’s how my family likes it.

    The egg plan parm looks amazing and the mother in law looks sweet! The next time you make it call me over. I’m always up for new things. ;0) LOL!
